Why are these unseasonably high January temperatures a problem for the Rocky Ridge Neighborhood Association?

The high temperatures affect the group's maple syrup production timetable.  Maple sap starts to flow when temperature rise above the freezing point during the day and drop below freezing during the night.  Normally this would take place in late February and March.  The dilemma is whether the group should tap the sugar maple trees this week or wait until mid-February.
